Việc sử dụng chính của phốt phát trong công nghiệp thực phẩm

Theo Dược điển Hóa chất Thực phẩm Hoa Kỳ (FCC), chức năng củaphốt pháttrong ngành công nghiệp thực phẩm có thể được chia thành 15 loại:
1. Chất chua: axit photphoric
2. Chất chống đóng cục: canxiphốt phát
3. Chất chống oxy hóa: canxi hypophosphite
4. Chất đệm: diammonium phốt phát, amoni dihydrogen phốt phát, calcium hydrogen phốt phát, calcium phốt phát, calcium pyrophốt phát, potassium dihydrogen phốt phát, dipotassium hydrogen phốt phát, sodium acid pyrophốt phát, sodium dihydrogen phốt phát, dihydrogen phốt phát Natri, sodium phốt phát, sodium pyrophốt phát
5. Chất cải tạo bột: diammonium phốt phát, ammonium dihydrogen phốt phát, calcium dihydrogen phốt phát, calcium hydrogen phốt phát
6. Chất nhũ hóa: kali photphat, kali polymetaphosphat, kali pyrophosphat, natri nhôm photphat (kiềm), natri Methotphat (không hòa tan), natri dihydro photphat, dinatri hydro photphat, natri polyphotphat (thủy tinh), Natri Pyrophosphat
7. Chất làm cứng: canxi đihiđro photphat
8. Chất làm ẩm: kali polymetaphosphat
9. Chất tạo màng: diammonium hydro phốt phát, amoni dihydrogenphốt phát, natri axit pyrophosphat, natri nhôm photphat (có tính axit)
10. Chất dinh dưỡng: canxi dihydro photphat, canxi hydro photphat, canxi photphat, canxi pyrophosphat, sắt photphat, sắt pyrophosphat, magie hydro photphat, magie photphat, mangan hypophosphite, natri sắt pyrophosphat, natri dihydro photphat, axit photphoric Dinatri hydro, natri photphat, natri pyrophosphat
11. Chất bảo quản: natri hypophosphite
12. Chất tạo chelat: canxi dihydrogenphốt phát, axit photphoric, kali dihyđro photphat, kali hydro photphat, natri axit pyrophosphat, natri Methotphat (không hòa tan), natri polyphotphat (thủy tinh)
13. Phụ gia tinh bột cải tiến: trimeta pyrophosphat, kali dihydrogen photphat
14. Chất điều chỉnh mô: kali pyrophosphat, kali tripolyphosphat, natri Methotphat (không hòa tan), dinatri hydro photphat (thủy tinh), natri tripolyphotphat
15. Thức ăn lên men: amoni dihydrogen phốt phát, diammonium hydrogen phốt phát, calcium dihydrogen phốt phát, calcium dihydrogen phốt phát, potassium dihydrogen phốt phát, dipotassium hydrogen phốt phát.
Từ trên có thể thấy rằng các chức năng củaphốt pháttrong chế biến thực phẩm chủ yếu có hai điểm, một là chất cải thiện chất lượng, hai là chất bổ sung dinh dưỡng.
